Lunch Ideas for Reactive Hypoglycemic Kids

My ten-year-old son, Leo, has been making his school lunches on his own for about three years now (he’s coming up for fifth grade). As a vegetarian, his lunches were often lackluster–there’s only so many peanut butter and jelly sandwiches a kid can have without getting sick of them! He just recently got his diagnosis of reactive hypoglycemia, and now I’m struggling to teach him how to put together a lunch that’s vegetarian and blood sugar friendly. That’s when I saw this Whimsical Bento Box and decided to give it a whirl.

Our First Hypoglycemic Friendly Lunch Box

My idea was for Leo and I to create a series of lunch boxes that he can make in the morning in ten minutes or less. In order to create the cute designs we had a set of miniature cookie cutters on hand and a Vidalia Chop Wizard, both of which are simple to use–even for a ten year old. In about ten minutes, the creation was made, and after I had taken the picture it was devoured in three minutes flat.
